Join Bridget for an interactive and hands-on Anglo-Indian cooking class in Bangalore. Begin by chopping and prepping vegetables and ingredients before you start cooking on the stove. Learn to make 3-4 colonial Anglo-Indian dishes using Bridget’s family recipes that were passed down to her. Learn to make a rice dish, a curry and a vegetable stir fry or dessert. As you cook, Bridget shares the history and evolution of Anglo-Indian cuisine and how the various dishes got their names. And before you sit down to share the meal you helped prepare, you will also learn how to plate and serve with the right accompaniments for each dish. You will also take home a printed copy of the recipes and a personally autographed copy of Bridget’s cookery book ‘Simple Egg Delicacies’.

There is a certain glamour about Anglo-Indian cuisine and so many stories associated with it, for example the Railway mutton curry that conjures up scenes of leisurely travel by train, of tables covered with snow white table cloths laid with gleaming china and cutlery, of turbaned waiters and bearers serving curry with rolls and crusty white bread in railway dining rooms. Join Bridget in her home in Koramangala where she is excited to share her Anglo-Indian cuisine and culinary traditions. A few dishes that you will share together are coconut or tomato pilaf, country captain chicken curry or railway lamb or mutton curry and cabbage foogath or mixed vegetable stir fry. End your meal with some dessert such as vermicelli pudding or plantain dumpling fritters or semolina or milk pudding.

Bridget is a cookbook author, independent food consultant and trainer in Anglo-Indian cuisine. She has authored award-winning recipe books about Anglo-Indian cuisine, which is her area of expertise. She has researched and revived the old forgotten dishes of the British Raj era. Her recipe books are a means of preserving for posterity the very authentic tastes and flavors of Colonial ‘Anglo’ India, besides recording for future generations, the unique heritage of the pioneers of Anglo-Indian cuisine. Anglo-Indian cuisine is a fusion of Western and Indian cuisine, it is both 'Anglo' and 'Indian' in nature with a distinct flavor, comfortably straddling both cultures. Apart from writing cooking books she also conducts workshops to train chefs on how to cook classic Anglo-Indian dishes, organizes food festivals and culinary events, helps restaurants revamp and reinvent their menus and offers cooking classes to travelers and locals.
